Lichen is used as the main ingredient here, just like in black tea, as the flavor profile is similar. Slightly bitter, complex.
The tea is also interesting as a cold extract for cocktails or in experimental cuisine.
Ingredients:
Icelandic moss, blackberry leaves, elderberries, rosehip peel, rose petals, yarrow
Preparation:
Pour boiling water over 1-2 teaspoons per cup (125 ml), cover, and let steep for 8 minutes.
